New. Novel. Never before. It’s all I’m looking from a degustation dinner. For something that I do occasionally, I expect to be captivated, or at the very least, entertained. Yes, I’m not that easily pleased although I rarely show the drama king in me.
Cut Catch Cucina Bali kick off the night with what would end up as one of my most memorable dish from the dinner. It was a simple Tomato but packed with a play of flavor that instantly won my approval. Especially the black olives and basil sorbet on the side. It geared up the palate and set the direction for the upcoming 7 courses.
However, I suppose I better not spoil the fun and bore you with too much detail. Instead, I’ll take you through the ones that speaks to me the most.
From the protein department, their Lamb was exceptional. Rarely do I enjoy lamb that much. Australian lamb two ways, tomato and white bean ragout, glaze carrot, caramelized garlic, spinach fondue. I was high with excitement I finished it in less than two minutes. It was that good. Just like the next one I’m about to show you, their dessert.
As a sweet tooth, their rendition of chocolate was spot on. The most enjoyable part for me was how the milk chocolate melt in your mouth and slowly dissipates with the truffle dust. Mouthgasm! If they were to give me a second portion I know I would’ve swallowed them all too.
Now, if I may conclude based on my limited culinary word bank, I’d say Cut Catch Cucina Bali’s Chef are taking a chance on his imagination. Each dish are well explored from both texture and taste. I love the mixture of seemingly unrelated ingredients. Sometimes it feels like being in a border and surely taking such risk might result in few minor misses, but after a gratifying 8-course meal, I can say that it is a chance well taken. I got what I wanted for.
